Whenever trying Indian wines just go for 2-3 year old varieties rather than going for a very vintage one. Hold back for more interesting articles on Indian cuisine and vineyards.

For these wines to be properly assessed by anyone you have to include more than just the grape, vintage, barrel, and alcohol. Latitude, elevation, soil, and distance from the ocean are hugely significant and will provide a better idea of what one can expect than subjective sensory notes. The flavor profiles you've supplied are 100% subjective and therefore not terribly useful. Your pairing suggestions make little to no sense. Pad Thai noodles by themselves have little to no flavor so pairing with them sounds weird. "Tapas foods" can be virtually anything: seafood, vegetables, meat, etc. Tapas is a distinction based on portion size, not so much ingredients. Wines don't pair better based on portion size so what do you mean? Also, Shiraz is the name given to Syrah when it's from the southern hemisphere. It's not an interchangeable term.

You are totally right on the aspects of other factors which I haven't included,they does matter but this is an article for providing outline of the wines when they are served and tasted and not going for complete analysis.These recommendations are my personal opinion and I regret that you didn't found them useful.I think after trying these wines you could be in a better position.
About pairing suggestions Pad Thai noodles has blending taste of sweet,salty, and sour flavours and goes well with chardonnay or in Indian case Sangiovese bianco which has low alcohol and high acid balance.You may try it with other Thai dishes as well like Tom yum. By Tapas food I meant Spanish snacks served with drinks.
Shiraz and Syrah can be used interchangeably because they are the same.
